Holiday Breakfast Recipe



Frittata!

We all know the Holidays are filled with heavy and calorific (I think I just made up a word) food. So it's important to sneak in a healthy meal where you can! I Love this as a breakfast recipe, but you can also eat it for lunch or dinner. The great thing about the frittata is that's it's so versatile, you can pretty much add anything you want! Here is the basic recipe I use, it is super simple and healthy!

Ingredients
1 cup egg whites
2 cups spinach
1/2 cup chopped mushrooms
1 shallot
salt and pepper
fat free feta (they have it at Trader Joe's)

1. Turn oven on broil, let preheat.
2. In an ovenproof skillet or pan (I use 10in), saute the shallots in cooking spray until soft over medium heat.
3. Add in mushrooms and saute until soft.
4. Add in spinach and cook it down (takes about 20 seconds).
5. Salt and pepper to taste.

6. Remove mixture from pan and let cool for about 5 minutes.
7. Whip up egg whites a little bit and then add veggie mixture.
8. Spray pan with cooking spray and pour in the egg and veggie mixture (don't stir or move it around too much).
9. Place over low heat, loosening the edges every couple minutes.
10. When the frittata is almost set (still has uncooked egg whites only on top), sprinkle feta on top and place under broiler for 2-3 minutes or until set.
11. Let sit for 5 minutes, cut and enjoy! It's best to cut it into wedges, like a pizza.

Note: You CAN add breadcrumbs to the top before you place in under the broiler. I skip it because it's less carbs but do whatever you fancy!

Delicious Margarita Recipe


I have a love hate relationship with margaritas. The idea of them is wonderful, a delicious cold refreshing beverage, makes you dream of laying on an isolated white sand beach somewhere listening to waves crash and feeling the ocean breeze on your skin. So you order one and it tastes like lime flavored cough syrup. Quite a conundrum, really.

Well if you love 'ritas as much me and are always on a quest to find a good one (I do this with caesar salads as well), I have a great recipe. It's refreshing and not too sweet! I am not going to put measurements because everyone likes their parts different so here are the ingredients:

Tequila!! Whoo-hoo!!(insert Vicki from Housewives of Orange County here)
Lime Juice
Lemon Juice
7up (I use diet 7up)
You can put a DASH of triple sec and/or margarita mix (yuck) in it if you desire.

Santé! (that's cheers in French)
